Nikki, a native Midwesterner and former Kentuckian, has been a practicing dietitian for 10 years and has been CrossFitting for the last 5. Her nutrition philosophy combines science, practical
application and individualization.
Nikki’s full-time role is as the Director of Human Nutrition Initiatives at an agriculture biotechnology firm where she helps farmers and producers across the globe apply the lens of human nutrition to agricultural practices for the improved nutrition of plants, animals and consumers. She is also the
Director of a human dietary supplement company specializing in digestive and cognitive health products.
Previously, Nikki was a dietitian for a large grocery retailer, where she served as a nutrition expert and spokesperson for the company. She has also conducted research at the University of Kentucky, examining the food environment as a determinant for obesity and community-based behavioral interventions focused on chronic disease prevention.
Nikki received her bachelor’s degree from and completed her dietetic internship at Iowa State University. She received her master’s degree in nutritional science from the University of Kentucky and recently completed an executive development program with University College Dublin in Ireland. She is a member of the International Affiliate of the Academy of Nutrition and Dietetics and its practice groups: Dietitians in Business and Communications, Dietitians in Integrative and Functional Medicine and Hunger and Environmental Nutrition.
Nikki’s favorite WODs are engine-heavy chippers and anything with running. Outside of the gym she has recently started competing in sprint triathlons and duathlons. She and her husband, Nate, have two cats: Antonio and Sis. Nikki loves Thai and Vietnamese food, bourbon, books, travel and exploring SATX with her crew.
